You know somebody will bring this up!

What about your backups? Most backup regimens maintain three or more archives at different time points, so you may be able to restore data from an older archive.

If not "real" backups, copy the data via rsync on a cron task in the middle of the night to different destinations changing by day of week and Bob's yer Uncle. Once you've got a local copy of the IMAP source folders, you are in business. Rsync can be set to only add new data without removing data not on the source.
