I think that is my primary question - going up the chain from my
internet provider, or from my registrar, how integrated or dependent
are they on USA service providers. I'd like to ensure as much as
possible that my email for example (IMAP at the provider) is
actually hosted in Canada, and can't be disabled at the flick of a
US switch.
If your domains are .ca, then CIRA is under Canadian privacy
legislation, The Personal Information Protection and Electronic
Documents Act (PIPEDA) at

Any of the main ones though: .com, .net, .org, etc. are US based so no
privacy.
One of the reasons I like that *websavers.ca* (I always get that wrong,
as in the last message - apologies) is backed by OVH, which I believe is
French, so GDRP would be up the chain is in a direction away from USA.
