_The Not So Short Introduction to LaTeX_ is a good starter doc.

There are a few 'cheatsheets' out there -- probably written in LaTeX
and in PDF form.  http://www.stdout.org/~winston/latex/ for example.

There's LyX which does a sort of LaTeX hybrid of its own, but can
export vanilla LaTeX. There's also something called Kyle or Kile, but
I've never tried it.

Start at http://www.latex-project.org/ .  There are many different
packages.

Yes, I think you would.  There was talk about a LaTeX-export feature
in OOo, but I'm not sure of its status.
