To close this one out:

In the end, I had no issues with UNetbootin, though I'm a bit concerned about the USB h/w on the front of the repurposed tower. When using a connector on the front (which originally had worked well), I couldn't boot. Using one of the connectors on the back was all I needed to do to boot successfully.

Gparted live worked like a charm, and I opted to install F20 with gnome 3.

Did I say gparted worked like a charm? Well, not quite. After partitioning, the mkfs command kept generating "device in use" errors, even though the drive wasn't mounted. If you find yourself using gparted, note that if you have drive busy errors, you'll have to reboot after partitioning (seriously) before you can format your new partitions.
