Are you just missing devel packages? or are the devel packages not
recent enough in Ubuntu for what gnumeric needs?

If you're just missing packages then you can just get debian/ubunto to
install the missing *-dev packages:

        apt-get build-dep gnumeric

You can also find out how debian builds the .deb package...

        apt-get source gnumeric
        cd gnumeric-*
        vim debian/rules

Here you want to look for the ./configure line and try to apply the same
options when building your own gnumeric.

Garnome would take all the though out of it.  But, as you noted, you
will have to spend some time getting familiar with it.
